
Tofu & Veggie Skewers
These colorful vegan BBQ skewers are a summer favorite! Made with lentil or chickpea tofu and fresh vegetables, marinated simply in olive oil, garlic powder, and a splash of BBQ oil, then grilled to perfection. Easy to prep and perfect for BBQs, picnics, or an easy weeknight grill dinner. Can also be made in the oven or air fryer.
Ingredients
- 200g tofu of choice
- 1 bell pepper
- 1 red onion
- 4-6 mushrooms
- 2 tbsp olive oil
- 3-4 tbsp BBQ sauce
- 1 tsp garlic powder
- Salt & black pepper, to taste
- Wooden or metal skewers
Instructions
- Cut the tofu and vegetables into bite-sized pieces that are easy to skewer.
- In a large bowl, mix olive oil, BBQ sauce, garlic powder, salt, and pepper.
- Add the tofu and chopped vegetables to the bowl. Toss gently until everything is evenly coated. Let sit for at least 15 minutes to absorb the flavors.
- Thread the marinated tofu and vegetables onto skewers in any order you like. Alternate colors for a vibrant look.
- Cook using a preferred method.
- Enjoy it hot off the grill! Serve with fresh salad, flatbread, or dipping sauce (like vegan yogurt-garlic or tahini-lemon).
Grill: Preheat to medium-high heat. Grill the skewers for about 10-15 minutes, turning occasionally until the tofu is golden and the veggies are tender and slightly charred.
Airfry: Roast at 200°C for 20-25 minutes, turning once halfway through.
