
Vegan Satay Skewers
These vegan satay skewers are rich, savory, and totally addictive. Made with chickpea tofu and coated in a flavorful satay marinade with peanut butter, Thai curry paste, soy sauce, and creamy coconut milk. Cook in the air fryer, oven, or on the grill, and baste with extra marinade in the final minutes for a glossy, irresistible finish. Ideal as a protein-packed main dish or appetizer!
Ingredients
- 150g tofu of choice
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp Thai red curry paste
- 1 tsp brown sugar
- 4 tbsp canned coconut milk
Instructions
- Cut the tofu into thick sticks or rectangles.
- Optional: Skewer onto wooden sticks for easier flipping and serving.
- In a small bowl, mix peanut butter, soy sauce, curry paste, sugar, and coconut milk until smooth.
- Place the tofu in a shallow dish or container.
- Pour 3/4 of the marinade over the tofu and gently coat. Let sit for at least 15-30 minutes.
- Cook in a preferred way.
- In the last 2-3 minutes of cooking, brush or drizzle the remaining marinade over the tofu for a glossy, extra-flavorful finish.
- Serve with hot peanut dipping sauce, rice, or crunchy slaw.
Air Fryer: Preheat to 200°C. Air fry for 12-15 minutes, turning halfway.
Oven: Preheat to 200°C. Bake on a parchment-lined tray for 20-25 minutes, turning once.
Grill: Cook for 8-10 minutes, turning occasionally, until browned and slightly crispy.
