Grilled Nofu & Veggie Skewers

Ingredients (for about 4 skewers)

  • 200 g lentil tofu, cut into thick cubes
  • 1 bell pepper, chopped into large chunks
  • 1 red onion, peeled and cut into wedges
  • 4–6 mushrooms, halved if large
  • 2 tbsp olive oil
  • 3-4 tbsp BBQ sauce
  • 1 tsp garlic powder
  • Salt & black pepper, to taste
  • Wooden or metal skewers

Instructions

Prep the Veggies & Nofu:

1. Cut the Nofu and vegetables into bite-sized pieces that are easy to skewer.

Make the Marinade:

2. In a large bowl, mix olive oil, BBQ sauce, garlic powder, salt, and pepper.

Marinate:

3. Add the nofu and chopped vegetables to the bowl. 
4. Toss gently until everything is evenly coated. Let sit for at least 15 minutes to absorb the flavors.

Assemble the Skewers:

5. Thread the marinated tofu, peppers, onion, and mushrooms onto skewers in any order you like. Alternate colors for a vibrant look.

Grill:

5. Preheat the grill to medium-high heat. 
6. Grill the skewers for about 10–15 minutes, turning occasionally, until the nofu is golden and the veggies are tender and slightly charred. / Airfry Option: Roast at 200°C for 20-25 minutes, turning once halfway through.

Serve:

7. Enjoy hot off the grill! Serve with fresh salad, flatbread, or dipping sauce (like vegan yogurt-garlic or tahini-lemon).
