    What is Nofu (and how is it different from tofu)?

    Nofu is our take on the classic staple. While traditional tofu is made by curdling soy milk with a coagulant, Nofu is crafted through a unique process using whole red lentils.

    The magic happens through the natural gelatinization of starches found within the legumes. By carefully heating the ground beans, these starches thicken to create a solid, stable block without the need for any artificial binders or firming agents. This process gives Nofu its signature crispy outside and a smooth, creamy interior that sets it apart from traditional soy-based alternatives. And because we use the entire lentil, the natural fiber, protein and rich flavor of the bean are naturally preserved right inside the block.

    How do I cook Nofu?

    Nofu is incredibly versatile and can be pan-fried, air-fried, or baked. Because it is made from whole lentils and contains less water than traditional soy tofu, it reaches a golden-brown crunch much faster.

    For the best results:

    • Prep: Pat the block dry and cube or slice it. We recommend tossing the pieces in cornstarch, or your favorite spices just before cooking.
    • The 'Sear & Release' Rule: When pan-frying, place the Nofu in a hot, lightly oiled pan and don't touch it. Because of the natural starches, the block will initially stick to the pan, but don't worry, it will naturally 'release' and slide easily once that signature crispy crust has formed.
    • The Finish: Since Nofu is a 'blank canvas,' we suggest adding liquid sauces (like soy sauce or glaze) at the very end of cooking. This keeps the exterior 'shatteringly crispy' while the inside stays smooth and creamy."
    Is it soy-free and/or gluten-free?

    Yes! The ingredients in Nofu are 100% soy-free and naturally gluten-free.

    A Note on Our Kitchen:
    While Nofu is made without soy or gluten, it is prepared in a professional kitchen that also handles these ingredients (including our traditional soy tofu). We take cross-contamination very seriously and follow strict cleaning and separation protocols to keep our Nofu 'clean'. However, because it is a shared space, we cannot 100% guarantee it is suitable for those with severe Celiac disease or life-threatening soy allergies.

    Our goal is to provide a safe, allergen-friendly alternative for those looking to diversify their plate!

    What is the shelf-life and how should i store my Nofu?

    Unopened: It will stay perfectly fresh in its vacuum-sealed pack for up to 14 days (just check the "Best Before" date on your label).

    Once opened: Treat it like any fresh food — keep it in an airtight container in the fridge and enjoy it within 2 to 3 days.

    How do I get my order?

    We offer two convenient ways to get your products: Local Delivery or Free Pickup.

    • Local Delivery: We deliver directly to your door in the Delft, Rijswijk and The Hague area.
    • Free Pickup: Skip the delivery fee by collecting your order at one of our designated pickup points.

    Once your order is placed, you will receive a notification with your specific delivery window or pickup instructions.

    What are the shipping costs and times?

    • Delivery Fee: A flat rate of €4 for all local deliveries.
    • Free Delivery: All orders of €15 or more qualify for free local delivery!
    • Shipping Days: TBD

    Where are the pickup locations?

    We currently have pickup points at:

    • The Hague: Beesechurgers, Koningin Emmaplein 3
    • Delft: Ecodusweg 25
